"Hakutsuru Nishiki has the same lineage as the king of sake rice, Yamada Nishiki, and produces a rich, dense sake with sweet, citrusy aromas of cantaloupe, green apple, and melon, and a long, elegant rice finish. The only other breweries besides Takagi Sake Brewery use "Hakutsuru Nishiki" to make sake. It is still cultivated mainly in the Hyogo Special A area, the same as Yamada Nishiki.
In 2019, it was ranked third in the sake rankings by SAKETIME, a website specializing in sake ratings, and its score remained stable, similar to that of 2018. Some enthusiasts like to compare "Eijin" to "Koyo 14" or "the next 14". As a sake brewery that only debuted in 2004, it has risen quite quickly, and is a recent sensation.
When Viktor Oyama took over Kiyamasa Sake Brewery, he created the motto "Now" with the message "Don't be bound by the past or the future, but cherish the present and live hard. With this passion for the "now", "And Now" was awarded a gold medal at the Heisei 17 Japan National New Sake Appraisal. Many of the sakes in the "And Now" series are outstanding, such as the "And Now Junmai Daiginjo", which has a sweet taste of fruit and a natural aroma like grass on the grassland, and a distinctive personality. The "And Now" series of sakes are ideal for pairing with meat and fish such as shrimp and sea urchin, and they also go well with Italian cuisine.
